It started with one cart, one cast-iron flattop and a recipe Don Miguel brought from Puebla. Twelve years later, the cart is still there β same corner, same charred edges, same line wrapping around the block.
We press our tortillas by hand every morning. We pull the meat off the flame in front of you. Nothing complicated β just a taco the way it should be.
